Give me a Quiche

Two nights ago, on a whim, I made a quiche.
Why I hadn’t done this before, I don’t know.
Quiche’s are a great vegetarian option, are super easy to make,
and they are dirt cheap!
Total cost: Under $5

This one is so good, I made it two nights in a row.

Here’s what you’ll need for the middle:
4 eggs
1-1 1/2 cups milk
1/2 an onion
1 bag of steam-in-bag broccoli
Butter or Margerine

And what you’ll need for the crust:
1 1/2 cups flour
1/2 cup of vegetable oil
2 tablespoons milk
2 teaspoons of sugar
1/2 teaspoon of salt

First things first, throw a bag of broccoli in the microwave for the time it says on the bag. 
Set the oven to 350.

Then finely chop a half an onion and throw it in a pan on low with a dollap of butter (or, I Can’t Believe It’s Not Butter, in my case).

Leave that be and start working on the crust.
Throw all of the ingredients in a bowl and smush.
It gets kind of tough so maybe have your bf/husband/roommate/sous-chef 
lend a helping hand.
Don’t forget to stir around the onion occasionally.

This is the part where an actual cook would roll out the dough and then place it in the pie pan. Not for me. I don’t have a roller thing and I don’t have the patience. 

Drop that ball of dough right in a sprayed pan and smush it out (smush is a highly technical term, obviously) til it looks like how your mama did it on Thanksgiving.

Note for next time: Nadine, repaint your dang nails before you take close ups of them!
See? Not so bad. It doesn’t have to look pretty cause it will taste delicious.

Next up, take that broccoli out of the microwave, dump it on a cutting board, and chop it into small pieces. Then add it to the onion. 

Leave that on low while you whip up the eggs. Drop 4 eggs into the same bowl you used for the dough. No real need to wash, it’s all going to the same place. Pour in about 1-1 1/2 cups of milk. I didn’t measure. You probably don’t need to either. Stir that vigourously with a fork.

Scoop the broccoli and onion into the bottom of your pie crust. 

Now a normal person would use shredded cheese. I didn’t have that so I used sliced extra sharp white cheddar (my fave!). 

I combined several recipes to create this one (mostly to accomodate what I had because I didn’t want to go to the grocery store). One recipe said to throw parmesan cheese in with the eggs. More cheese? Yes, please. I threw a handful in. 

Pour the egg right on top of your broccoli/onion/cheese and you’re done! Throw that in the oven at 350 for about 45 minutes. You should be able to stick a knife in it and have the knife come out clean.

And if all goes well, it should look like this:

Mine kind of got a big cheese bubble. A quiche pimple ha. 
If your countertop doesn’t look like a giant disaster after you’re done, you didn’t do it right.
So try making a quiche. Despite the 37 pictures above, I swear it’s super easy.
